I use double water. You can experiment and see rivers can be gainfully employed by layering. Thus each farmplot is next to 7 water pieces -> (5*7) = 35% faster farming.
Oh yeah, bought the potato tech as one of my first things with crowns. Thus i have potatoes a bit sooner than i should
